So, I took the plunge.
Yep. Decided to get healthy this new year, and signed up for Weight Watchers. I’ve done WW before and just really needed the accountability to live a healthier lifestyle. I figured if I was investing dollars into it, I might actually lay off the sweets and fast food a bit more.
One of my favorite recipes of all time is Texas Caviar. It’s great as a side salad or with tortilla chips (that part isn’t the healthiest, but you can make your own chips or use the baked ones that are fewer calories and fat).
Here’s how you make it:
INGREDIENTS
- 2 cans black-eyed peas (don’t use frozen)
- 2 cans shoe-peg corn
- 2 cans Rotel tomatoes with chiles (original recipe)
- 2 bell peppers (red and yellow are preferable)
- One bunch green onions
- One bunch cilantro
- Fresh lemon juice (half a large lemon will do)
- Salt and pepper, to taste
- Italian dressing
- Hot sauce, to taste
INSTRUCTIONS
Empty the black-eyed peas and corn into a strainer and rinse. Mix with Rotel in a large bowl. Chop bell peppers, green onions, and cilantro and mix with other vegetables in bowl. Squeeze lemon juice over mixture and add salt and pepper; stir. Mix in enough Italian dressing to coat–I end up using between a third and half of a large bottle. Stir. Add desired amount of hot sauce and stir. Refrigerate at least a few hours.
TIP
This makes a huge batch, so you can cut the recipe in half for smaller portions.
Enjoy! Have a great weekend.
Your Turn: What’s your favorite dip for chips?
*Yesterday, I guest posted on Keli Gwyn’s blog about the time my husband sang for me. Won’t you drop by and say hello?
I'd omit the bell pepper, but the rest looks super yummy. I make an amazing warm dip that gets eaten galore but WW would gasp!
2 cans chicken (drained)
2 blocks cream cheese
1 stick of butter
garlic salt to taste
Serve with pita chips, fritos, multigrain Tostitos
It's super yum. Just dump in the crock pot on low and stir as the butter and cream cheese soften. But you can't forget the garlic salt! It's key! lol
Sounds yummo!
Oh that looks so good. Actually, I was wanting a snap this weekend as I've got lots of holing away and writing to do, so maybe I'll make that tonight. 🙂
Do it, do it, do it! 🙂 Let me know how you like it.
Okay! And you probably figured this out, but I meant snack. Hehehe…
I LOVE dips. I am so going to make this! Thanks for posting! Seems like it would be a great snack for me while expecting.
My favorite chip dip is Tex Mex. I can refried beans mixed with taco seasoning, spread on platter. Top with sour cream, taco sauce, lettuce, tomatoes and cheese and serve with tortilla chips. Probably not that healthy, but yummy all the same!
That should be 1 can, not "I can". I do not can anything. 🙂
Haha, your reply to yourself made me LOL!! And your dip sounds amazing!!
Congratulations on plunging into your healthier path! I've joined Weight Watchers, as well. Thanks for this great recipe. Num…num…num. Go, go, GO!!!
It's hard at first to discipline myself with my eating, but I like how I can be in control of what I have, and I don't have to give up everything completely.
Mmm, that looks yummy! I haven't met a dip I haven't liked. 🙂 I'm trying to lose a few extra pounds too. It's going well! Good luck!!
Jill, you are so tiny!!! But good luck in your own endeavor too. 🙂
Mmmmmm…That looks so yummy! We are big chip and dip eaters around here, so I have lots of favorite recipes, but a recent SUPER favorite is Buffalo Chicken Dip. It's not healthy, by any means, but it's soooo good.
2 (14 oz. cans of white chicken)
1/2 cup Frank's Red Hot Buffalo Sauce (you can adjust the amount for your spicy preference)
1/2 cup Mozzarella Cheese
1 (8 oz. block) Cream Cheese
1/2 cup Ranch Dressing
Heat on the stove or in a microwave and then put into a small crockpot to keep warm – however, this doesn't usually last long with a crowd, so I really don't need to keep it in a crockpot! You can serve it with tortilla chips or veggie sticks.
Uh, yum!!!!
